For the crust:

1 ½ cups graham cracker crumbs

⅓ cup sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup sugar

3 large eggs

2 ripe bananas, mashed

1 teaspoon vanilla extract

1 tablespoon lemon juice

¼ cup sour cream

For the caramelized bananas:

2 large ripe bananas, sliced

¼ cup brown sugar

2 tablespoons unsalted butter

1 teaspoon cinnamon

For the rum glaze:

½ cup dark rum

½ cup brown sugar

1 tablespoon unsalted butter

1 teaspoon vanilla extract

Pinch of salt

Instructions
 

Prepare the crust:

    - Preheat the oven to 350°F (175°C).

      - In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove and let cool.

          Make the caramelized bananas:

            - In a skillet over medium heat, melt the butter. Add sliced bananas and cook for 2-3 minutes until golden.

              - Sprinkle brown sugar and cinnamon over the bananas, gently stirring to coat. Cook for an additional 2-3 minutes until caramelized. Set aside to cool.

                Prepare the cheesecake filling:

                  - In a large mixing bowl, beat the cream cheese until smooth and creamy.

                    - Gradually add sugar and mix until well blended.

                      - Add eggs one at a time, mixing well after each addition.

                        - Stir in mashed bananas, vanilla extract, lemon juice, and sour cream until smooth.

                          Combine and bake:

                            - Fold the caramelized bananas into the cheesecake filling gently.

                              - Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

                                - Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour. Then refrigerate for at least 4 hours or overnight.

                                  Prepare the rum glaze:

                                    - In a saucepan, combine dark rum, brown sugar, butter, vanilla extract, and a pinch of salt over medium heat.

                                      - Stir until the sugar dissolves, and let it simmer for about 5-7 minutes until it thickens slightly. Remove from heat and let cool.

                                        Serve:

                                          - Once the cheesecake is set, carefully remove it from the springform pan.

                                            - Drizzle the rum glaze over the cheesecake or serve it on the side. Slice and enjoy!
