1 tablespoon milk

Salt and pepper, to taste

1 tablespoon olive oil

½ cup fresh mozzarella cheese, diced

1 medium tomato, diced

¼ cup fresh basil leaves, chopped

Balsamic glaze, for drizzling (optional)

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined and fluffy.

    Heat the olive oil in a non-stick skillet over medium heat.

      Pour the egg mixture into the skillet, tilting the pan to ensure even distribution.

        Cook for about 2-3 minutes, or until the edges start to set.

          Sprinkle the diced mozzarella, tomato, and chopped basil evenly over one half of the omelette.

            Using a spatula, carefully fold the other half of the omelette over the filling and cook for another minute or until the cheese begins to melt.

              Slide the omelette onto a plate, and if desired, drizzle with balsamic glaze.
