Ingredients
  

1 lb (450g) Andouille sausage, sliced

1 cup long-grain white rice

2 tablespoons olive oil

1 bell pepper (red or green), diced

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

2 cups chicken broth

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1 cup frozen peas

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions
 

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and sauté until browned, about 5 minutes. Remove the sausage from the skillet and set aside.

    Cook the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for another minute, stirring frequently.

      Combine Rice & Spices: Stir in the rice, Cajun seasoning, and smoked paprika. Cook for about 2 minutes until the rice is slightly toasted.

        Add Liquids: Pour in the diced tomatoes (with juices) and chicken broth. Stir well to combine, and bring to a gentle boil.

          Simmer: Reduce heat to low, cover, and let simmer for 15-20 minutes or until the rice is tender and has absorbed most of the liquid.

            Incorporate Peas & Sausage: In the last 5 minutes of cooking, add the frozen peas and return the browned sausage to the skillet, stirring to combine. Taste and season with salt and pepper as needed.

              Garnish & Serve: Once cooked, remove from heat and fluff the rice gently with a fork. Garnish with sliced green onions before serving.
