Ingredients
  

1 lb Andouille sausage, sliced

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 tbsp Cajun seasoning

1 tsp smoked paprika

1/2 tsp black pepper

1/4 tsp cayenne pepper (adjust for heat preference)

1 cup frozen peas

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for about 3-4 minutes until the vegetables are softened. Stir in the minced garlic and cook for another minute until fragrant.

      Add Rice and Spices: Add the rice to the skillet and stir well to coat it with the oils and vegetables. Sprinkle in the Cajun seasoning, smoked paprika, black pepper, and cayenne pepper. Stir to combine.

        Pour in Broth: Pour the chicken broth into the skillet and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.

          Combine and Add Peas: After the rice is cooked, remove the lid and carefully fluff the rice with a fork. Return the browned sausage to the skillet and stir in the frozen peas. Cook for an additional 3-4 minutes until the peas are heated through.

            Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve hot. Adjust seasoning if necessary before serving.
