Ingredients
  

1 lb Andouille sausage, sliced

4 medium Yukon Gold potatoes, peeled and diced

1 large onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

2 celery stalks, chopped

4 cups chicken broth

1 cup heavy cream

2 cups frozen corn

1 tablespoon Cajun seasoning

1 teaspoon dried thyme

Salt and pepper to taste

2 green onions, sliced (for garnish)

2 tablespoons olive oil

Instructions
 

Brown the Sausage: In a skillet over medium heat, add the olive oil. Once hot, add the sliced Andouille sausage and cook until browned, about 5-7 minutes. This step enhances the flavor of the sausage. Transfer the browned sausage to the slow cooker.

    Prep the Vegetables: In the same skillet (you can add a little more oil if necessary), add the diced onion, garlic, bell pepper, and celery. Sauté until the vegetables are tender, about 5 minutes. Transfer the sautéed vegetables to the slow cooker.

      Combine Ingredients: In the slow cooker, add the diced potatoes, chicken broth, frozen corn, Cajun seasoning, thyme, salt, and pepper. Stir well to combine all the ingredients.

        Slow Cook: Cover the slow cooker and set it to low. Cook for 6-8 hours or high for 3-4 hours, until the potatoes are tender.

          Add Cream: About 30 minutes before serving, pour in the heavy cream and stir well. Allow the soup to heat through.

            Serve: Ladle the soup into bowls and garnish with sliced green onions. If desired, serve with crusty bread on the side.
