Ingredients
  

1 cup brown sugar

1/4 cup cornstarch

1/4 teaspoon salt

2 3/4 cups whole milk

1/4 cup unsalted butter

1 teaspoon vanilla extract

2 large egg yolks (lightly beaten)

Whipped cream (for serving)

Instructions
 

In a medium saucepan, whisk together the brown sugar, cornstarch, and salt until well combined.

    Gradually add the whole milk to the dry mixture, whisking continuously to prevent lumps from forming.

      Place the saucepan over medium heat and cook the mixture, stirring constantly, until it starts to thicken and bubble, about 5-7 minutes.

        Once thickened, reduce the heat to low. Add the butter and vanilla extract, stirring until the butter melts completely.

          In a separate bowl, whisk the egg yolks until smooth. Gradually temper the egg yolks by adding a small amount of the hot pudding mixture to them, whisking vigorously. Then, slowly pour this mixture back into the saucepan.

            Continue cooking for another 2-3 minutes, stirring constantly until well combined and thickened to your desired consistency.

              Remove from heat and strain the pudding through a fine mesh sieve into individual serving dishes or a large bowl to eliminate any lumps.

                Cover the pudding with plastic wrap, making sure the wrap touches the surface to prevent a skin from forming.

                  Refrigerate for at least 2 hours, or until chilled and set.
