Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup fresh blueberries (or frozen, thawed)

1 tablespoon lemon juice

Zest of 1 lemon

Crumble topping: ½ cup brown sugar, ½ cup flour, ¼ cup rolled oats, ½ teaspoon cinnamon, ¼ cup melted butter

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.

Incorporate Buttermilk: Gradually add the buttermilk while mixing, and ensure everything is well combined.

Combine Mixtures: Slowly fold in the dry ingredients until just combined. Be careful not to overmix.

Fold in Blueberries: Gently fold in the blueberries, lemon juice, and lemon zest.

Prepare Crumble Topping: In a small bowl, combine the brown sugar, flour, rolled oats, and cinnamon. Drizzle in the melted butter and mix until crumbly.

Assemble and Add Topping: Pour the batter into the prepared baking pan, smoothing it out evenly. Sprinkle the crumble topping over the batter.

Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove from the oven and let cool in the pan for about 10 minutes before slicing.
