Ingredients

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

1 tablespoon lemon juice

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon chili powder

1 teaspoon cumin powder

1 teaspoon coriander powder

4 tablespoons butter

1 large onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, minced

1 can (15 oz) crushed tomatoes

1 cup heavy cream

Salt to taste

Fresh cilantro, chopped (for garnish)

Instructions

In a mixing bowl, combine the yogurt, lemon juice, garam masala, turmeric, chili powder, cumin, and coriander. Add the chicken pieces, ensuring they are well coated. Marinate for at least 1 hour (or overnight for best flavor).

In a large skillet or pan, melt 2 tablespoons of butter over medium heat. Add the marinated chicken (drain excess marinade) and cook until browned and cooked through, about 8-10 minutes. Remove from the pan and set aside.

In the same pan, add the remaining 2 tablespoons of butter. Sauté the chopped onion until translucent, about 5 minutes. Stir in the garlic and ginger, cooking until fragrant, about 1 minute.

Add the crushed tomatoes to the onion mixture, stirring well. Simmer for 10 minutes, allowing the sauce to thicken and flavors to meld.

Reduce heat to low and stir in the heavy cream, mixing well. Return the cooked chicken to the pan and simmer for another 5 minutes, allowing the chicken to soak up the creamy tomato sauce. Season with salt to taste.

Serve hot, garnished with chopped cilantro, alongside naan or rice.
