4 cups Brussels sprouts, trimmed and thinly sliced

1 cup shredded carrots

1/2 cup red cabbage, thinly sliced

1/2 cup green onions, sliced

1/2 cup almonds, sliced or slivered (optional)

3/4 cup Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions
 

Prepare the Brussels sprouts by trimming the ends, removing any outer leaves that are damaged, and then thinly slicing them with a sharp knife or mandoline.

    In a large mixing bowl, combine the sliced Brussels sprouts, shredded carrots, red cabbage, green onions, and almonds (if using).

      In a separate smaller bowl, whisk together the Greek yogurt, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth and well combined.

        Pour the dressing over the vegetable mixture and toss until all the ingredients are evenly coated.

          Let the coleslaw sit for at least 15-20 minutes before serving to allow the flavors to meld and the Brussels sprouts to soften slightly.
