Broccoli, Rice, Cheese, and Chicken Casserole

Ingredients
  

2 cups cooked rice (white or brown)

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (or cream of chicken soup)

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for topping, optional)

2 tablespoons olive oil (for drizzling on top, optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the cooked rice, cooked chicken, and broccoli florets.

      In a separate bowl, whisk together the cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper until smooth.

        Pour the soup mixture over the rice, chicken, and broccoli, then fold in 3/4 cup of shredded cheddar cheese, mixing until all ingredients are well coated.

          Transfer the mixture to a greased 9x13 inch baking dish. Spread it evenly.

            Sprinkle the remaining shredded cheddar cheese over the top of the casserole.

              If using, mix the breadcrumbs with olive oil and sprinkle them evenly over the cheese layer.

                Cover the casserole loosely with aluminum foil and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                    Remove the casserole from the oven and let it cool for a few minutes before serving. Enjoy your delicious cheesy chicken and broccoli casserole!
