2 large butter croissants

2 large eggs

2 slices of sharp cheddar cheese

4 strips of crispy bacon

1 ripe avocado, sliced

1 tablespoon unsalted butter

Salt and pepper to taste

A handful of fresh arugula or spinach

Hot sauce (optional, for serving)

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon strips until they're crispy. Once done, remove them from the pan and let them drain on paper towels.

    Scramble the Eggs: In the same skillet, drain excess bacon grease if necessary, leaving about 1 tablespoon. Crack the eggs into a bowl, season with salt and pepper, and whisk until combined. Pour them into the skillet and scramble them until they are just set. Remove from heat.

      Prepare the Croissants: While the eggs are cooking, slice the butter croissants in half horizontally. Toast them lightly in the skillet, cut side down, just until they are golden brown. Alternatively, you can pop them in a toaster or oven.

        Assemble the Sandwich: On the bottom half of each toasted croissant, layer the scrambled eggs, cheddar cheese, crispy bacon, avocado slices, and a handful of arugula or spinach.

          Finish with the Top Half: Place the top half of the croissant on each sandwich to close. If you like your cheese extra melty, you can briefly return the assembled sandwiches to the skillet for a minute on each side.
