1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

4 large eggs

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Shredded cheese (optional, for topping)

Instructions
 

Cook the Base: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the diced onion and bell pepper, sautéing for about 5 minutes until they become soft and translucent.

    Add Garlic and Spices: Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper, cooking for another minute until fragrant.

      Combine the Beans and Tomatoes: Pour in the black beans and diced tomatoes with their juices. Stir well to combine, and bring the mixture to a gentle simmer. Let it cook for about 10 minutes, stirring occasionally, until heated through and slightly thickened.

        Prepare the Eggs: Create four small wells in the chili mixture and crack an egg into each well. Cover the skillet with a lid and let the eggs cook to your desired doneness (about 5 minutes for runny yolks and up to 8 minutes for firmer yolks).

          Serve: Once the eggs are cooked, remove the skillet from heat. Garnish the Breakfast Chili with fresh cilantro and serve with avocado slices and shredded cheese if desired.
