Ingredients
  

1 unbaked pie crust (9-inch)

1 cup pecan halves

3/4 cup light brown sugar

1/2 cup granulated sugar

1/4 cup unsalted butter, melted

3 large eggs

1/2 cup corn syrup (light or dark)

1/4 cup bourbon

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Prepare the Pie Crust: Preheat your oven to 350°F (175°C). Fit the unbaked pie crust into a 9-inch pie dish, crimping the edges if desired. Place it in the fridge while you prepare the filling.

    Toast the Pecans: Spread the pecan halves in an even layer on a baking sheet and toast in the preheated oven for 6-8 minutes, or until fragrant and lightly browned. Stir halfway through to ensure even toasting. Remove and let cool slightly.

      Mix the Filling: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth. Add the eggs, corn syrup, bourbon, vanilla extract, and salt. Mix until well combined and smooth.

        Assemble the Pie: Arrange the toasted pecans evenly in the bottom of the prepared pie crust. Carefully pour the filling mixture over the pecans.

          Bake: Place the pie in the preheated oven and bake for 60-70 minutes, or until the filling is set in the center. If the pie edges start to over-brown, you can cover them with strips of foil.

            Cool: Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before slicing. This will help the filling to firm up.

              Serve: Slice and serve on its own or topped with whipped cream or a scoop of vanilla ice cream.
