For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

For the Blueberry Swirl:

1 cup fresh or frozen blueberries

¼ cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch (optional, for thickening)

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 tablespoon all-purpose flour

Zest of 1 lemon

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until well mixed.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

          Make the Blueberry Swirl:

            - In a small saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries start to burst and release their juices, about 5-7 minutes.

              - For a thicker sauce, stir in the cornstarch dissolved in a tablespoon of water, and cook for 1-2 more minutes until thickened. Remove from heat and let cool slightly.

                Prepare the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese and sugar using an electric mixer until smooth and creamy.

                    - Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract, sour cream, lemon zest, and flour until fully combined.

                      Assemble the Cheesecake:

                        - Pour half of the cheesecake filling over the cooled crust.

                          - Spoon half of the blueberry mixture over the filling and use a knife to create swirling patterns by gently mixing the blueberry into the cheesecake.

                            - Pour the remaining cheesecake filling over the first layer, followed by the remaining blueberry swirl. Use the knife again to create more swirls on top.

                              Bake the Cheesecake:

                                - Place the springform pan on a baking sheet and bake in the preheated oven for about 55-70 minutes, or until the edges are set but the center still has a slight jiggle.

                                  - Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for about 1 hour to prevent cracking.

                                    Chill and Serve:

                                      - After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight, to set completely.

                                        - Before serving, garnish with additional fresh blueberries if desired.
