2 cups cottage cheese

2 large eggs

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon cinnamon

2 cups fresh or frozen blueberries

1/4 cup chopped walnuts (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish.

    Mix Wet Ingredients: In a large bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Whisk until well blended.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, baking powder, and cinnamon.

        Incorporate Ingredients: Gradually fold the dry mixture into the wet mixture until fully combined.

          Add Blueberries: Gently fold in the blueberries and chopped walnuts (if using), ensuring they're evenly distributed throughout the mixture.
