Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 large onion, sliced

2 cloves garlic, minced

1 tablespoon freshly ground black pepper (adjust to taste)

1 teaspoon ginger, minced

1 red bell pepper, sliced

2 spring onions, chopped

Salt to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a medium bowl, mix the chicken pieces with soy sauce, oyster sauce, rice vinegar, cornstarch, and a pinch of salt. Marinate for at least 30 minutes.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until browned and cooked through. Remove and set aside.

      In the same skillet, add sliced onion, garlic, and ginger. Sauté for about 2-3 minutes until the onion becomes translucent.

        Add the red bell pepper and stir-fry for another 2 minutes until slightly tender.

          Return the cooked chicken to the skillet. Add freshly ground black pepper and stir to combine all ingredients. Cook for an additional minute to let the flavors meld.

            Sprinkle chopped spring onions on top and toss to mix. Adjust seasoning with salt if necessary.

              Serve hot, garnished with fresh cilantro if desired, over steamed rice or with noodles.
