500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

3 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (red or green), diced

1 medium onion, sliced

2 green onions, chopped (for garnish)

Salt to taste

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces, black pepper, soy sauce, oyster sauce, and rice vinegar. Mix well and let it marinate for at least 30 minutes to infuse the flavors.

    Heat the Oil: In a large pan or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger, frying them until fragrant (about 30 seconds).

      Cook the Chicken: Add the marinated chicken to the pan. Sauté the chicken for about 5-7 minutes until it's browned and cooked through, ensuring it’s not overcrowded in the pan. You may need to do this in batches.

        Add Vegetables: Once the chicken is cooked, add the sliced onion and diced bell pepper. Stir-fry everything together for another 3-4 minutes until the vegetables are tender but still crisp.
