1 can (15 oz) black beans, drained and rinsed

1 ripe mango, diced

1 red bell pepper, finely chopped

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño pepper, seeded and minced (optional for heat)

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the black beans, diced mango, red bell pepper, red onion, cherry tomatoes, jalapeño pepper (if using), and avocado. Gently toss to combine all the fresh ingredients.

    In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper until well blended.

      Pour the dressing over the salad ingredients and gently fold everything together, ensuring the salad is evenly coated with the dressing.

        Stir in the chopped cilantro and give it one last gentle toss.

          Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
