1 cup (2 sticks) unsalted butter, melted

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup Biscoff cookie spread

1/2 cup crushed Biscoff cookies (for topping)

1/2 cup white chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until well combined and smooth.

      Add the eggs one at a time to the mixture, stirring well after each addition. Then, add the vanilla extract.

        In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

            Fold in the Biscoff cookie spread until you have a uniform batter. If using, gently fold in the white chocolate chips.

              Pour the batter into the prepared baking pan, smoothing the top with a spatula. Sprinkle the crushed Biscoff cookies evenly over the top.

                Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

                  Allow the blondies to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out and cool completely on a wire rack.
