1 lb flank steak

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

4 large flour tortillas

1 cup cooked white or brown rice

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Monterey Jack)

1 avocado, sliced

1 cup fresh salsa or pico de gallo

1/2 cup sour cream (optional)

Fresh cilantro for garnish

Marinate the Steak: In a bowl, mix olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Coat the flank steak evenly in this marinade. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Steak: Preheat your grill or stovetop skillet over medium-high heat. Once hot, place the marinated flank steak and cook for about 6-7 minutes on each side, or until it reaches your desired doneness (medium-rare is about 130°F). Remove from heat and let it rest for 5-10 minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, combine rice, black beans, corn, and half of the shredded cheese. Mix well, adding a pinch of salt if necessary.

        Assemble the Burrito: Lay a flour tortilla flat on a clean surface. Start with a generous scoop of the rice and bean mixture in the center. Add slices of the rested steak, a few slices of avocado, fresh salsa, and the remaining cheese on top.
