1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

4 cups fresh spinach, chopped

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried basil

½ teaspoon crushed red pepper flakes (optional for heat)

1 cup coconut milk (or heavy cream for a non-vegan option)

Salt and pepper to taste

Fresh lemon juice (from 1 lemon)

Grated Parmesan cheese for serving (optional)

Instructions
 

In your slow cooker, add the diced onion, minced garlic, carrots, and celery, creating a flavorful base.

    Stir in the drained white beans, chopped spinach, thyme, basil, and red pepper flakes.

      Pour in the vegetable broth and mix well. Add salt and pepper to taste.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the vegetables are tender.

          About 30 minutes before serving, stir in the coconut milk and let it incorporate into the soup.

            Right before serving, squeeze fresh lemon juice into the soup for a bright flavor.

              Serve hot, garnished with grated Parmesan cheese if desired.
