2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, drained and chopped

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup chicken broth

8 ounces penne pasta (or pasta of your choice)

1 cup fresh mozzarella, diced

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing into strips.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add in the chopped sun-dried tomatoes and Italian seasoning, cooking for another 2 minutes.

        Create the Creamy Base: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the mixture to a gentle simmer, and let it cook for about 3-4 minutes until it starts to thicken slightly.

If the sauce is too thick, add the reserved pasta water a little at a time until it reaches your desired consistency.
