Ingredients

4 bone-in, skin-on chicken thighs

1 cup BBQ sauce (homemade or store-bought)

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon brown sugar

1 teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

Salt to taste

Fresh parsley for garnish (optional)

Instructions

Prepare the Marinade: In a medium bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, black pepper, cayenne pepper (if using), and a generous pinch of salt. Mix until well combined.

Marinate Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Preheat Grill: Preheat your grill to medium-high heat (around 375°F to 400°F). If using charcoal, prepare a two-zone fire for direct and indirect cooking.

Grill the Chicken: Remove the chicken thighs from the marinade, allowing excess to drip off. Place the thighs skin-side down on the grill grates over direct heat. Grill for about 5-7 minutes until the skin is crispy and has grill marks.

Add BBQ Sauce: Flip the thighs over and brush a generous amount of BBQ sauce on the top side. Continue grilling for another 5-7 minutes.

Move to Indirect Heat: Reduce the heat to medium or move the thighs to the cooler side of the grill. Brush the other side with BBQ sauce and close the grill lid. Cook for an additional 15-20 minutes, or until the internal temperature reaches 165°F, basting with more BBQ sauce halfway through.

Rest and Serve: Once fully cooked, remove the chicken thighs from the grill and let them rest for 5 minutes. Garnish with freshly chopped parsley if desired. Serve with your favorite sides, like cornbread or coleslaw.
