BANG BANG CHICKEN SALAD

Ingredients
  

2 cups cooked chicken breast, shredded

4 cups mixed salad greens (arugula, spinach, romaine)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1/4 red onion, thinly sliced

1 avocado, diced

1/2 cup crispy wonton strips

1/4 cup cilantro, chopped

Salt and pepper to taste

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon rice vinegar

1 teaspoon lime juice

Optional: a drizzle of honey for sweetness

Instructions
 

Prepare the Salad: In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, avocado, and cilantro.

    Shred the Chicken: If not prepped, shred the cooked chicken breast using two forks or your hands until it is in bite-sized pieces.

      Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, lime juice, and optional honey until smooth. Taste and adjust seasoning if needed.

        Combine: Add the shredded chicken to the salad bowl. Drizzle with the Bang Bang sauce and gently toss until the chicken and vegetables are evenly coated.

          Serve: Divide the salad among serving plates. Top with crispy wonton strips for an added crunch. Season with salt and pepper to taste.
