1 lb ground lamb or beef

1 medium onion, finely chopped

2 carrots, diced

2 cloves garlic, minced

1 cup frozen peas

1 cup beef or vegetable broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

4 large potatoes, peeled and cubed

1/2 cup milk

4 tbsp butter

1 cup shredded cheddar cheese (optional)

Instructions
 

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Make the Mashed Potatoes: Add the milk and butter to the drained potatoes. Mash until smooth, seasoning with salt to taste. Set aside.

      Cook the Meat Filling: In a large skillet over medium heat, add the ground lamb or beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

        Add Vegetables: Add the chopped onion, diced carrots, and minced garlic to the skillet with the meat. Cook for about 5-7 minutes, until the vegetables are softened.

          Season and Simmer: Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, and broth. Bring to a simmer and allow to cook for about 10 minutes or until thickened slightly. Mix in the frozen peas and remove from heat.

            Assemble the Pie: Preheat your oven to 400°F (200°C). In a greased baking dish, spread the meat mixture evenly. Top with the creamy mashed potatoes, smoothing them out to cover completely. If desired, sprinkle shredded cheddar cheese on top.

              Bake: Place the assembled shepherd's pie in the preheated oven and bake for 25-30 minutes, or until the top is golden and slightly crispy.
