Ingredients

2 large sweet onions (such as Vidalia or Walla Walla)

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably Italian seasoned)

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/4 cup olive oil

Salt and pepper to taste

Balsamic reduction (for drizzling, optional)

Instructions

Preheat your oven to 375°F (190°C).

Peel the onions and cut off the top and bottom. Carefully slice each onion into petals without cutting all the way through; aim for about 12 cuts per onion.

In a mixing bowl, combine the breadcrumbs, Parmesan cheese, parsley, garlic, oregano, red pepper flakes, olive oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Gently open up the petals of each onion and sprinkle the breadcrumb mixture liberally in between. Be sure to fill each petal.

Place the filled onions in a baking dish with the cut sides facing up. If you have leftover breadcrumb mixture, sprinkle it on top of the onions.

Drizzle a little extra olive oil over the top of each onion to help them crisp up during baking.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the onions are tender and the topping is golden brown.

Remove from the oven and let cool slightly before serving. If desired, drizzle with balsamic reduction for an added flavor burst.
