8 oz (225 g) elbow macaroni

2 cups (480 ml) whole milk

1 cup (240 ml) heavy cream

4 tablespoons (60 g) unsalted butter

1/4 cup (30 g) all-purpose flour

2 cups (200 g) sharp cheddar cheese, shredded

1 cup (100 g) Gruyère cheese, shredded

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and black pepper, to taste

1/2 cup (60 g) breadcrumbs

2 tablespoons (30 g) grated Parmesan cheese

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook until al dente, usually about 6-8 minutes. Drain and set aside.

      Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2-3 minutes until it forms a roux (it should turn light golden in color). Slowly whisk in the whole milk and heavy cream. Continue whisking until the mixture thickens, which should take about 5 minutes.

        Add Cheeses and Seasonings: Remove the saucepan from heat and stir in the cheddar and Gruyère cheeses until melted. Add the Dijon mustard, garlic powder, smoked paprika, salt, and black pepper. Stir until well combined and creamy.

          Combine Pasta and Sauce: Pour the cheese sauce over the cooked macaroni and stir until evenly coated.

            Prepare for Baking: Transfer the mac and cheese mixture into a greased 9x13 inch (23x33 cm) baking dish.

              Top with Breadcrumbs: In a small bowl, combine the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture evenly over the top of the mac and cheese.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden and crispy.

                  Cool and Serve: Remove from the oven and let it cool for a few minutes before serving.
