4 large eggs

2 cups fresh spinach, washed and chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup milk

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Freshly grated nutmeg (optional)

Fresh basil or parsley for garnish

Preheat the oven: Preheat your oven to 375°F (190°C).

    Sauté the spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, around 2-3 minutes. Season with salt, pepper, and a pinch of nutmeg if using. Remove from the heat.

      Prepare the ricotta mixture: In a medium mixing bowl, combine the ricotta cheese, milk, half of the Parmesan cheese, and a pinch of salt and pepper. Mix well until creamy.

        Assemble the dish: In a greased baking dish (approximately 8x8 inches), spread the sautéed spinach evenly at the bottom. Pour the ricotta mixture over the spinach, ensuring a nice even layer.

          Add the eggs: Carefully crack the eggs on top of the ricotta and spinach mixture, spacing them evenly. Sprinkle the remaining Parmesan cheese over the top.

            Bake: Place the baking dish in the preheated oven. Bake for 15-20 minutes, or until the egg whites are set, and the yolks are cooked to your desired doneness.
