12 lasagna noodles

2 cups cooked shredded chicken

2 cups ricotta cheese

1 large egg

3 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

28 oz can crushed tomatoes

2 cups fresh spinach, chopped

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil for drizzling

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook until al dente, about 8-10 minutes. Drain and lay them out on a baking sheet to prevent sticking.

      Prepare the Filling: In a large bowl, combine the cooked shredded chicken, ricotta cheese, egg, half of the mozzarella cheese, salt, pepper, basil, and oregano. Mix until well combined.

        Make the Sauce: In a skillet, heat a drizzle of olive oil over medium heat. Sauté the minced garlic for about 1 minute until fragrant. Add the crushed tomatoes and chopped spinach, cooking until the spinach is wilted. Season with salt and pepper to taste, and let the sauce simmer for about 5 minutes.

          Assemble the Lasagna:

            - In a 9x13 inch baking dish, spread a thin layer of the tomato-spinach sauce on the bottom.

              - Place 4 lasagna noodles over the sauce.

                - Spread half of the chicken and cheese mixture over the noodles.

                  - Add another layer of sauce, followed by another 4 noodles.

                    - Repeat the process with the remaining chicken and cheese mixture, more sauce, and top with the last layer of noodles.

                      - Finally, pour the remaining sauce over the noodles and sprinkle with the remaining mozzarella and Parmesan cheese.

                        Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

                          Cool and Serve: Let the lasagna cool for about 10 minutes before slicing. Garnish with fresh basil if desired. Serve hot and enjoy!
