2 ripe avocados

4 slices of whole-grain bread

4 large eggs

2 tablespoons unsalted butter

1 teaspoon chili flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon lemon juice

Fresh cilantro or parsley for garnish

Optional: Crumbled feta cheese or microgreens

Prepare the Chili Butter: In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the chili flakes and stir. Cook for an additional minute until fragrant, then remove from heat. Set aside.

    Toast the Bread: While the chili butter is cooling, toast your whole-grain bread slices in a toaster or on a skillet until golden brown and crispy.

      Prepare the Avocado: Cut the ripe avocados in half, remove the pits, and scoop the flesh into a bowl. Add the lemon juice, salt, and pepper. Mash the avocado with a fork until smooth but still slightly chunky, then set aside.

        Cook the Eggs: In a non-stick skillet, add a dash of olive oil or a small amount of butter over medium heat. Crack the eggs into the skillet and cook them sunny-side up, or to your desired doneness. Season with salt and pepper.

          Assemble the Toast: Spread a generous layer of the mashed avocado onto each toasted slice of bread. Top with a fried egg.

            Add the Chili Butter: Drizzle the warm chili butter over the eggs and avocado.
