1 lb (450g) flank steak, thinly sliced against the grain

2 tbsp soy sauce (low sodium recommended)

2 tbsp oyster sauce

2 tbsp vegetable oil (divided)

1 tbsp ginger, freshly grated

2 cloves garlic, minced

1 bell pepper, sliced (any color)

1 cup sugar snap peas, trimmed

1 cup broccoli florets

2 green onions, chopped

1 tbsp cornstarch

1/4 cup beef stock or water

1 tbsp sesame oil

1 tsp fresh lime juice

Sesame seeds, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the thinly sliced flank steak, soy sauce, oyster sauce, ginger, and garlic. Mix well and let it marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

    Prepare the Sauce: In a separate small bowl, mix the cornstarch with beef stock or water until smooth. Set aside.

      Stir-Fry the Veggies: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the bell pepper, sugar snap peas, and broccoli. Stir-fry for about 3-4 minutes until vegetables are vibrant and slightly tender. Remove from the pan and set aside.

        Cook the Beef: In the same skillet, add the remaining tablespoon of vegetable oil. Add the marinated beef in a single layer and cook for about 2-3 minutes without moving, allowing it to sear. Then stir-fry until the beef is browned and cooked through (about another 2-3 minutes).

          Combine Everything: Return the cooked vegetables to the skillet with the beef. Pour in the cornstarch mixture and sesame oil, stirring everything together until the sauce thickens and coats the beef and vegetables well. Cook for another 1-2 minutes.

            Finish and Serve: Remove from heat, drizzle with lime juice, and sprinkle with chopped green onions and sesame seeds. Serve hot over steamed rice or noodles.
