2 large English cucumbers

1/4 red onion, thinly sliced

1/4 cup chopped fresh cilantro

1/4 cup chopped peanuts (or sesame seeds)

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon sugar (or honey)

1 teaspoon grated fresh ginger

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Instructions
 

Prepare the Cucumbers: Start by slicing the cucumbers in half lengthwise. Then, using a spoon, scoop out the seeds to prevent the salad from becoming watery. Slice the cucumbers into half-moons about 1/4 inch thick. Place them in a large bowl.

    Add Onion and Cilantro: Toss in the thinly sliced red onion and chopped cilantro with the cucumbers.

      Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes (if using). Mix until the sugar is dissolved.

        Combine Everything: Pour the dressing over the cucumber mixture and gently toss until everything is evenly coated. Adjust seasoning with salt and pepper to taste.

          Chill and Serve: Let the salad sit for about 15 minutes to allow the flavors to meld. Just before serving, sprinkle with chopped peanuts or sesame seeds for added crunch.
