2 medium apples (such as Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

Oil for frying (vegetable or canola)

Instructions
 

In a mixing bowl, combine the diced apples with 1 tablespoon of granulated sugar and a sprinkle of cinnamon. Set aside to let them macerate for about 10 minutes.

    In another bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      In a separate bowl, whisk the egg, milk, and vanilla extract together. Pour this mixture into the dry ingredients, and stir gently until just combined. Do not overmix.

        Carefully fold in the macerated apples, ensuring they are evenly distributed throughout the batter.

          In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C).
