2 cups fresh broccoli florets

2 cups fresh cauliflower florets

1 large apple (preferably a tart variety like Granny Smith), diced

½ cup red onion, finely chopped

½ cup dried cranberries

½ cup walnuts or pecans, chopped

½ cup feta cheese, crumbled (optional)

¾ cup Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Instructions
 

Begin by washing the broccoli and cauliflower under cold water. Cut them into bite-sized florets and steam them lightly for about 3-4 minutes until they're bright green but still crisp. Drain and let cool.

    While the veggies cool, prepare the dressing. In a mixing bowl, combine the Greek yogurt, apple cider vinegar, honey or maple syrup, salt, and pepper. Whisk well until smooth and creamy.

      In a large bowl, mix together the cooled broccoli, cauliflower, diced apple, red onion, dried cranberries, and chopped nuts. If you're adding feta cheese, fold it in gently at this stage.

        Drizzle the yogurt dressing over the salad mixture and toss everything gently until well coated.

          Taste and adjust the seasoning with more salt or pepper if necessary. You can also add more dressing if you like it creamier.

            Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

              Serve chilled or at room temperature, garnishing with extra nuts if desired.
