Ingredients
  

2 cups broccoli florets

2 cups cauliflower florets

1 large apple (preferably Granny Smith or Honeycrisp), diced

1/2 cup dried cranberries

1/2 cup chopped walnuts or pecans

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt

2 tablespoons honey or maple syrup

1 tablespoon apple cider vinegar

Salt and pepper to taste

Optional: 1/2 cup shredded cheddar cheese

Instructions
 

Blanch the broccoli and cauliflower: In a pot of boiling water, blanch the broccoli florets for 2 minutes, followed by the cauliflower florets for another 2 minutes. Drain and plunge them into ice water to stop the cooking process. Drain again and set aside.

    In a large bowl, combine the blanched broccoli and cauliflower, diced apple, dried cranberries, chopped nuts, and red onion.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), apple cider vinegar, salt, and pepper until smooth and well combined.

        Pour the dressing over the salad mixture and toss gently until all the ingredients are coated.

          If using, sprinkle the shredded cheddar cheese on top and give it a final gentle toss.

            Refrigerate the salad for at least 30 minutes to allow the flavors to meld together before serving.
