500g beef mince

2 tablespoons fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon chili flakes (adjust to taste)

4 spring onions, chopped (white and green parts separated)

1 red bell pepper, diced

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Cooked jasmine rice or quinoa, for serving

Fresh cilantro or parsley, for garnish

Instructions
 

Heat the Oil: In a large skillet or wok, heat the sesame oil over medium-high heat.

    Cook the Beef: Add the beef mince to the pan, breaking it apart with a spatula. Cook, stirring frequently, until browned (about 3-4 minutes).

      Add Aromatics: Stir in the grated ginger, minced garlic, and the white parts of the spring onions. Sauté for another minute until fragrant.

        Create the Sauce: In a small bowl, combine the soy sauce, brown sugar, rice vinegar, and chili flakes. Pour this mixture over the browned beef in the skillet.

          Thicken the Sauce: Stir in the cornstarch mixture and continue to cook while stirring for about 1-2 minutes, or until the sauce thickens and becomes sticky.

            Incorporate Vegetables: Toss in the diced bell pepper and the green parts of the spring onions, cooking for an additional 1-2 minutes until the bell pepper is slightly tender but still crisp.
